Maple-Brown Sugar Oatmeal Bars

As summer is wrapping up and the weather is getting a little bit colder each day, we’re really starting to get into the fall spirit. One of the best ways to celebrate the season is to bake homemade treats and fill your kitchen with the scents & flavors of autumn. This Maple-Brown Sugar Oatmeal Bar recipe is made with our Chocolate Pumpkin Pie Soft-Baked Biscotti and makes a delicious on-the-go breakfast snack. We all have those mornings where it seems like there’s never enough time to get ready, pack a lunch, and get out the door at a reasonable hour, and often times the most important meal of the day is skipped. But don’t worry; this grab-and-go oatmeal breakfast bar recipe will be your secret weapon on those hectic days. The hearty oats will keep you full all through the morning, and the Chocolate Pumpkin Pie Soft-Baked biscotti will give you an extra special treat on mornings that would otherwise seem not–so-special.

Maple-Brown Sugar Oatmeal Bars with Chocolate Pumpkin Pie Soft-Baked Biscotti (adapted from 12Tomatoes recipe)

Makes 12 bars

Ingredients:

3 cups old-fashioned rolled oats

1 cup milk (we used 2% but feel free to use whatever is on hand, even dairy-free options like almond or soy milk)

½ cup dark brown sugar, packed

¼ cup pure maple syrup

¼ cup coconut oil, melted

1 large egg

1 ½ teaspoons cinnamon

1 ½ teaspoons baking powder

¼ teaspoon salt

3oz Chocolate Pumpkin Pie Cookie Bites

Method:

  1. Preheat oven to 350°F and lightly grease an 8-inch square baking pan. Place two pieces of parchment paper in pan, perpendicular to one another with some overhang on all sides, and grease parchment paper
  2. In a medium bowl, combine milk, maple syrup, melted coconut oil, egg, and brown sugar and whisk to combine.
  3. Add oats, cookie bites, cinnamon, baking powder, and salt to bowl and stir until incorporated. Pour batter into prepared pan.
  4. Bake brown sugar oatmeal bars in oven until edges are golden brown and center has set, about 60 minutes. Remove from oven and let cool completely before slicing into bars and serving.
