Sweet & Salty Party Mix

Everyone loves the classic ChexMix party mix and now it seems they've made so many versions it's mind boggling. One thing we know here though at the Bakeshop is that we, personally, can never have enough sweet in our lives but we LOVE it best when desserts and snacks also have a salty element to balance out the flavors.  So we decided to turn the idea of party mix on its head and put some of our chopped biscotti in the bowl to add another crunchy, sweet and delicious component to an already addictive treat.  

The beauty of this recipe is that you really don't ever need a recipe at all. Just throw together whatever flavors, textures and ingredients you like and you've got a crowd-pleasing mix...or at least a you-pleasing mix. And isn't pleasing yourself more important anyway!? 

Ingredients:
-
8 oz pretzel nuggets
-8 oz. roasted salted peanuts
-10 oz. Brown Sugar Coffee Cake soft-baked biscotti, roughly chopped (about 2x5oz Packages or 10 cookies)
-4 oz dark chocolate chips, preferably Guittard

Caramel Sauce:
-1 stick salted butter
-1/2 c. light corn syrup (or brown rice or tapioca syrup)
-1 1/2 c. light brown sugar
-1 t. pure vanilla extract

Flaky sea salt for garnish

Method:
-Pre-heat oven to 225 degrees Fahrenheit
-In a medium saucepan on the stove top melt the butter. Add the corn syrup and brown sugar and let come to a boil. Remove from heat and stir in vanilla. Set aside
-In large bowl combine dry ingredients.  Slowly distribute warm caramel sauce all over dry ingredients and use rubber spatula to carefully combine. Spread mixture out onto sheet pan in 1 even layer on parchment paper.  
-Bake for 20-25 minutes,  moving party mix around every 5-7 minutes with spatula to ensure even baking and get the pieces underneath warm and brown
-Remove from oven; while still warm sprinkle sea salt on mixture.  Let cool and store or package. 

Stays fresh in sealed container for up to 4 days (<-- though ours NEVER lasts that long in the house!)

You can really tailor this to your tastebuds but here are some alternatives we thought would be delicious!
-Any of the other 4 flavors of our soft-baked biscotti (Esp. the GF Banana Bread if you're trying to make this gluten-free)
-Peanut Butter filled pretzels
-Potato Chips
-Chocolate covered pretzels
-Raisins
-Granola
-Chocolate covered nuts
