It's chocolate mousse's quick and easy-to-make but no-less-delicious cousin. Grab a box of your favorite chocolate pudding mix (go ahead, use Jell-o brand, this is a judgement-free zone), some soft-baked biscotti, and cold cream, and you are in business. This easy chocolate mousse recipe needs no eggs, comes together in 5 minutes, and disappears in even less time.
Bullwinke – a Quick and Easy Chocolate Mousse
Serves 4
Ingredients:
1- 6oz Instant dark chocolate pudding mix
1% milk (the higher the fat the richer the pudding)
1 cup cold, heavy cream
1 Tablespoon granulated sugar
1 teaspoon pure vanilla extract
8 x 1oz Chocolate Chip Brownie soft-baked biscotti
Method:
Follow package directions and whisk milk into pudding mix until lumps are removed. Let set by chilling in fridge while you make the whipped cream.
Prepare whipped cream: pour cold cream into stand mixer bowl (or whisk by hand) and whisk at medium speed until soft peaks form. Add sugar and vanilla. Continuing whisking until stiff peaks form.
Using a rubber spatula, fold the whipped cream into the pudding. You want to keep the pudding streaky, not completely mixed. Scoop into individual serving dishes.
Take cookies out of packaging and break 4 of them into small pieces. Tuck the pieces into the cream/pudding mixture and hide. Keep 4 cookies whole and stick into bowls when done as spoon/garnish.
