We fully acknowledge that we are a little obsessed with yogurt bowls lately. But they are just so delicious and versatile that it’s hard not to go crazy for them! Something about the creamy yogurt, crunch of the soft-baked biscotti, and burst of fruit makes these the perfect treat any time of the day. Not to mention, you can create simple and unique recipes with whatever fruit and toppings you have on hand in your pantry. We thought we would elevate our typical yogurt bowl to make a yogurt parfait because sometimes it feels good to be a little fancy in your every day life.
For this recipe, we wanted to do a play on classic PB&J flavors to create a Raspberry & Almond Butter Yogurt Parfait. This parfait starts with choosing your favorite Greek yogurt for the base. We have been loving Greek yogurt lately and the tartness of the yogurt goes really well with the sweet and slightly tart raspberries. Next is the almond butter, and like the yogurt, feel free to choose whichever almond butter you like best. And finally, the real star of this yogurt parfait is The Original Soft-Baked Biscotti Cookie Bites. Of course you can use any flavor of Cookie Bites but we like the pairing of the chocolate-covered raisins with the raspberry and almond butter and we think you will too!
This recipe is all about versatility so if raspberries and almond butter aren’t your thing, here’s a couple other options we thought would be yummy for a yogurt parfait:
- Peanut butter, sliced bananas, and Banana Bread Cookie Bites
- Trader Joe’s Cookie Butter, cherries, and Chocolate Chip Brownie Cookie Bites
If you don’t have parfait glasses feel free to use any tall, clear glasses you have.
These yogurt parfaits would be perfect served at a weekend brunch at your home or even during the week if you feel like you need a special breakfast.
Raspberry & Almond Butter Yogurt Parfaits
Makes 4 servings
Ingredients:
3 cups Greek yogurt
1 cup raspberries
3 tablespoons almond butter, or your favorite nut butter
1 bag of Original Cookies Bites
4 parfait glasses, or any tall clear glasses
Method:
- Layer 1/3 cup greek yogurt into the bottom of each glass.
- Alternate layers of raspberries, almond butter, and Cookie Bites with yogurt until glasses are filled to the top, about 3 layers.
- Add a few extra Cookie Bites and raspberries on top and enjoy!
